Antinitrosating
Antinitrosating agents are chemical compounds that are used to inhibit the formation of nitrosamines, which are carcinogenic compounds found in certain foods. These agents work by binding to nitrite ions, which prevents them from reacting with amines to form nitrosamines. Examples of antinitrosating agents include ascorbic acid, sodium ascorbate, and sodium erythorbate. These compounds are often used in cured meat products and other food products to reduce the formation of nitrosamines and thus reduce the risk of cancer. In addition, they can also be used to reduce the formation of other harmful compounds such as nitrosothiols and nitrosamides.
